Eating with naked gratitude. Obviously I love purple, so how appropriate that I would have this gorgeous purple eggplant to make for dinner tonight. The best part is that it is out of my girlfriends yard. How absolutely yummy is that?

My friend Lisa and her husband Andy live up in beautiful country in Massachusetts, with a gorgeous garden and Andy grows the most incredible vegetables. I was so excited for these home grown treats and here is the collection he gave me to take home.  All of these herbs were included in my little goodie bag.

Mint, basil, tarragon, sage, rosemary. This morning for breakfast, I just took a handful of the herbs and threw them into my shake and WOW did that produce a burst of flavor.

Here’s what I did for breakfast

  • a handful of herbs (just threw them in all together)
  • a cup of blueberries
  • a piece of avocado
  • a hunk of fresh ginger
  • a swig of chocolate almond milk
  • a handful of collard greens
  • a tablespoon flax
  • a couple of almonds

Into the Vitamix (my handy dandy high powered blender and friend that’s been with me for 15 years and never let me down) and that’s the morning story and glorious shake.

Thanks Andy for being a wonderful gardener and a generous friend; sharing those treasures with me.

I’ll let you know tomorrow what I make with the eggplant.

Oh and did I mention the beautiful little potatoes. They still have the dirt on them from coming right out of the ground.
