This was gorgeous local organic cauliflower on sale in WholeFoods for $2.99 for the large bunch.
It was so pretty, I used it as a centerpiece in the middle of my table at my cooking class with some parsley to jazz it up. These are my two clients, Janice and Evie, enjoying the Vegetable Cooking Class. When I was done admiring my cauliflower centerpiece for the the day, I made some cauliflower millet mash and ate it.
YUMMY! Now who is going to know that there are no potatoes in my mashed potatoes? This may be the one secret you keep from your spouse.
Here’s me…loving my food and eating right out of the big bowl !
Here’s what you need and how you do it:
- To Make Your Mash:
- 1 cup millet
- 3 cups water
- 2 cups cauliflower (in small florets or medium chunks)
- Pinch sea salt
Placed washed millet in pan. Stir millet over medium heat continually until it dries and becomes aromatic and golden in color. (About 5-8 minutes) Add water and cauliflower. Bring to a boil. Add salt. Cover and simmer for 30 minutes. Remove from heat and put through food processor. Blend to desired consistency.
Yummy Mushroom Sauce:
Saute together:
- Toasted sesame oil
- Medium onion
- 12 mushrooms (white or shitake)
- ¼ cup tamari or soy sauce
- 2 tbsp mirin
- 1 drop brown rice vinegar
- Scallions or parsley for garnish
