This “to die for” pie has no red dye to make it this beautiful pink color. Strawberries and beets do it the honor!
- 2 tablespoons Cacao, Raw, Unsweetened
- 1 tablespoon coconut oil, melted
- 3 dates, pitted
- 3/4 cup walnuts
- 1 tsp salt
- 1 cup cashews, raw, unsalted raw, unsalted and soaked in water for 1 hour and drain off water when mixing
- 1/2 avocado
- 6 dates, pitted pitted and soak the dates in the almond milk for 1 hour
- 1/2 cup almond milk, soak the dates in the milk
- 2 tablespoons coconut oil
- 2 cups strawberries fresh or frozen
- 1 beet, medium medium, roasted and peeled
- 1 tablespoon vanilla
- 2 tablespoons chia seed
This pie is nakedly simple and amazing. A true treat for a healthy sexy body.
Mix crust ingredients in a food processor and process until dough sticks together. Spread it in a pie dish. I used a heart shape pie dish. This crust easily spreads using a piece of parchment paper to slide it up the sides.
The 2 secret ingredients is an avocado for fat as I wanted to experiment cutting down on the amount of coconut oil. The beet added just enough sweetness allowing me to half the amount of dates I would normally use. The beet also gave me the beautiful hot pink color of the pie.
MIX ALL STRAWBERRY FILLING INGREDIENTS IN A MIXER UNTIL BLENDED WELL. ADD TO CRUST AND FREEZE FOR 3-4 HOURS. Store in fridge if you happen to have leftovers.

My sisters and I ate the whole pie and felt like kids while licking the plate clean. Here is a picture of as kids. That’s me over to the right, the oldest of 4 sisters (and 4 brothers whom we did not share this pie experience with) We felt like kids eating this and licking our plates clean.
With such nakedly clean ingredients we served it for lunch on the side of a huge green tossed salad. I love breaking the standard rules about what foods you can eat when. Who said you can’t have dessert first?Better yet, I’ll take a strawberry creme pie as my main meal with my salad on the side please.
YUMMY… It doesn’t get much better than having your cake and eating it too, without dairy, gluten, sugar or added bloat or GUILT…
The fun thing about this “concoction” is that the color will vary depending on the amount of beets you use. The color also changes depending on whether you use fresh or frozen strawberries. So have fun!
This is a gorgeous example made by a gorgeous client. She used a bit more beet and strawberries. She also used a spring form cheese cake pan in place of a pie dish. You get to choose. YUMMY FUN.. What will your’s look like?
