Jam n’ Peanut Butter Muffin with a Sweet Surprise

Sometimes you just crave a PB&J and yes you can stay naked and eat this Jam N’ Peanut Butter Muffin. (no flour, no gluten, no dairy, no grains)

Mix:
- 2 egg whites
- 1 whole egg
- 1 cup peanut butter (I love Crazy Richards because they have only peanuts in their butter)
- 2 ripe bananas
- 1 tsp vanilla
- 2 tablespoons flax
- 1 tsp baking powder
- 6 dates, pitted
- 1/4 cup almond milk
Other (additions and filling):
- 1/4 cup raw cacao nibs (sprinkled on bottom before baking)
- strawberry jam (filled into the middle of muffin)

Okay seriously this is so yummy. Crazy simple to make, quick to back. They freeze well, thaw well, carry well and are unbelievably satisfying in an old fashion sort of way.
Mix all ingredients (except cacao nibs and jam) in a blender or food processor and mix until smooth.
Line cupcake papers in pan and sprinkle cacao nibs on the bottom. Then pour the batter over the nibs.
Fill the cups to the top of the paper (this mixture won’t rise too much higher than the fill line)
You can make 18 mini muffins or 10 large muffins.
Bake at 350 for 12 minutes until done.
While still warm, make a hole in the center of the muffin and spoon in a tsp of jam filling in the center of the muffin. (you can decide how much depending on the size of your muffin).
Here you can see that I made a few mini and a few larger cups.
I love how easy this recipe is to whip up. I love how it reminds me of being a kid. I love that it is no guilt naked eating. I love how pretty it is.
OTHER OPTIONS:
- use almond butter instead of peanut butter
- add goji berries or raisins
- add blueberries to the mix

BITING INTO THIS IS SIMPLY DELISH! I love the sweet surprise of biting into the cacao at the bottom of the muffin. Even though the cacao is not sweetened, the muffin itself is just sweet enough.
Since the jam in the center is your last step in this creation, you can leave that out if you are hard core and don’t need jam on your peanut butter! YOU CHOOSE.
