Oatmeal Raisin Chocolate Munch Cookies (and a whole lotta love)

Okay. First off it would be wrong of me not to warn you on this one: Oatmeal Raisin Chocolate Munch Cookies.

These could technically be dangerous, if you are not mindful, that is.

But I know you are doing the mindful thing around your eating, so you’ll be fine.

This one little “naked” cookie is quite satisfying and more than enough. Set your intention that you are one and done at least for the day and really dig in and enjoy it.  You can serve this for breakfast with a bowl of berries or for a snack /dessert with a cup of tea. You choose when and where. But you must promise one thing. You must eat it with delite, joy and release all guilt from anywhere in that gorgeous little head of yours.

This is a seriously concoct-able recipe, meaning you can basically throw it all together into a bowl, mix, roll into golf size balls, squish down onto the pan and bake at 350 degrees. In 15 minutes you have warm, melted chocolately dripping cookies to munch on. “Seriously concoctable” means you can’t screw it up.

You need 2 bowls: one for wet ingredients and one for dry.


  • 1 cup coconut flour
  • 2 cups regular uncooked oats (not quick oats)  (one cup you can ground down into flour if you have a vitamix and can easily do this. If not you can just use the oats as is)
  • 1 tsp baking soda
  • 1 tsp salt (I used black Hawaiian sea salt but have fun with this and try different kinds)
  • 2 bars (3.5 oz each) of very high quality dark chocolate smashed up into chunks (I use “ghirardelli” or “green and blacks”
  • 1/2 cup raisins


  • 2 whole eggs (sorry veganista’s 🙁 but I’m pretty sure if you sub in 2 tbsp chia and 1/2 cup applesauce you can forgo the little eggs) 
  • 1 tsp vanilla extract
  • 1/2 cup dates, pitted and soaked in 1/2 c almond milk (you need to soak them for a few hours so they are blendable) (USE THE DATES AND THE MILK IN THE RECIPE)
  • 1/2 c coconut oil
  • 1/2 c almond butter

Mix dry in a bowl. Mix wet in blender. Pour wet ingredients onto the dry and gently stir together. You will get a nice dough consistency that you can easily roll into a golf size ball. Place about 2 inches apart on cookie sheet and gently press the balls down to flatten into a puffy 1/2 thick cookie. Bake at 350 for approximately 12-15 minutes.

PRETTY. All packaged up and tied with a bow. And if you love these embroidered “I AM” napkins, you can own them too.

This recipe will yield about 24 large cookies.  An abundant amount of yumminess… so you can freeze the extra. The great thing about this recipe is that it freezes really well. You can bite right into it from the freezer (without breaking off any teeth). They are great for baking once and eating 24 times.(unless you’re sharing, then all bets are off)
