The Adult Cookie

What a loving thing to do!! Make an adult version of a cookie that you don’t want to share. A special treat that you keep all to yourself. Better than that, how about if you actually gave yourself permission to act like a kid again and stick your hand in the cookie jar and enjoy these babies.
Technically you could call it a XXX Cookie because it’s one of those things that falls into the category of X-cellence in nutrition, X-treme self love and X-traordinary care.
I consider it a gift to Self.
There is something special about the combination of these ingredients, figs, pecans, hazelnuts, dark chocolate with ginger that make this cookie so unlike any other. And although I refer to it as an adult cookie , nothing helps you feel more like a kid again than dunking a delicious cookie in warm chocolate almond milk or your favorite hot tea.
When these cookies are frozen they become even more OMG-like! They are not too sweet, but just perfectly perfect. Using really fine ingredients allows you to appreciate the taste of the organic dried figs and Green and Blacks crystalized- ginger laced dark chocolate. YUM.
These are simple to make with only a few steps. A vitamix is a key helper for this recipe. Here are all the ingredients once blended, mixed all together to form a dough that looks like any ordinary dough. The consistency surprised me too when I was concocting, because I used NO FLOUR or SUGAR at all (except if you’re counting the chocolate bar. But who’s counting? At 50 years old, pleasure is the only thing that counts, so let go of the idea that a little dark chocolate can hurt you).
You get a nice big 14 in a dozen.
Oops only 12 made it to the serving plate…. yeeeohhhh! yummmmm.

READ ON TO BAKE …
STEP ONE: Mix together in vitamix for about 5 minutes until it forms into an peanut buttery consistency. Then place into a mixing bowl.
- 1/2 cup hazelnuts (raw and unsalted)
- 1/2 cup pecans (raw and unsalted)
STEP TWO: Place 4 plump but dried figs into same vitamix (you don’t have to clean in between) and give a whirl until they chop up into a choppy mixture. Then place into the mixing bowl with the nut mixture.

STEP THREE: Smash up the chocolate bar. An easy way to do this is to place on the table. Keeping chocolate wrapped, bang on it with a heavy metal serving spoon until it breaks into little chunks. Add chipped chocolate to mixing bowl with nuts and figs.
- 3.5 oz bar of fine dark chocolate (any brand or flavor you like- have fun and try different ones here)
STEP FOUR: Add the rest of the below ingredients into mixing bowl and stir all ingredients together to form cookie dough
- 1 whole egg
- 1/2 tbsp coconut oil
- 1/2 tsp baking powder
As you stir together, you’ll be amazed at how you will watch the consistency of dough form right before your eyes.
Drop by rounded tablespoon onto parchment lined cookie sheet.
Bake at 350 for 3 minutes. Press down soft cookie to flatten slightly. Continue to bake for a total of 10-12 minutes until slightly hard. These cookies will not harden until they cool and taste the most amazing when you eat them frozen right from the freezer. That actually turns out to be a good thing because you’ll have a good excuse not to eat them all directly out of the oven.

Sadly, I can’t eat nuts but I’ve never wanted to as badly as when reading this recipe!
Hi Carol, Bummer… Nuts is a biggie for me. I love them and use them often. I’m sorry to make you salivate with no reward at the end. I have an idea for you though. How about you melt the bar of chocolate and dip the dried figs into it. Set it on wax paper and let it set. Now you have chocolate covered figs with no nuts. I like it!

If you click on the link to figs and chocolate, it takes you to amazon to purchase them. I happened to find both of those at the Shoprite in New Jersey. But amazing can deliver to you if you are not local. The figs are divine! Really worth buying.
