Underground Muffins

These Underground Muffins are so good they are aboveboard!
These muffins are completely NAKED, falling into the category of #glutenfree #sugarfree #dairyfree #paleo #healthy #delicious #easy #yum-azing #NAKED
I call them underground. Not because you have to sneak to eat them. But because you may seriously want to hide them. There are so good. Even your most generous self will have a challenge sharing.
Trust me on this one. Every time I have a guest, they start out with the offer of “Let’s share one” but once they take the first bite, it’s all over. Minds change and the offer is off the table!
Bring the roots and apple to a quick simmer for 3 minutes until very slightly soft (they’ll still be hard but easier to grate into pieces). (you can skip this step if you are rushed for time. The muffins still come out amazing, just slightly less moist )
The other reason I call them “Underground Muffins” is that they are made with root veggies, carrots, parnips and sweet potatos at the core. All yummy deliciousness and power packed nutrients for your body.
Grate the roots.
Add the rest of the dry ingredients to a large bowl.

Give it a whirl until liquid. The Vitamix, in my opinion, is the best blender out there for EVERYTHING. Love, Love!
Pour the wet onto the dry and mix to form a batter like consistency.
You can make muffins of any size. I used a regular size muffin tin here and this batter made a perfect dozen.
OH!! The ICING! Yum-azing.
I could eat this off the spoon and I often do. This recipe makes a very generous amount of icing and I like to ice mine thick. If you want more of a glaze, water some down and drizzle on top of your muffin. And eat the rest as it’s own dessert.
If you want to spread the love, pack some up pretty and take a box to a friend.
Or serve them up pretty on a platter. I’m using this gorgeous rose cupcake server that was gifted to by my Mom.

Of course you can go no further than to be sure you plate one for yourself on the most “Mmmmm” plate you can find.
RECIPE:
Makes 12 on a regular size cupcake tin. Or one 8×8 square pan or 9 inch round cake. You choose !
Bake at 350 for 20 minutes. 1 cupcake is a serving size and serves well as a daily snack or breakfast meal. These freeze well. If you make 12, freeze 6 for next week and keep the rest in the refrigerator.
THE DRY:
Add all dry ingredients into large bowl and mix. Set aside and move onto the wet ingredients. (It looks like a long list but most of these things will already be staples in your pantry.
- 1 carrot grated
- 1/2 parsnip grated
- 1/2 medium sweet potato grated
- 1 cup almond flour
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1 tbsp ground flax
- 1 tbsp chia seed
- 1/2 tbsp cinnamon
- 1/2 tsp baking soda
- 4 mejool pitted dates
- 1/4 tsp salt
THE WET:
Everything into the vitamix and whirled to liquid. Pour on and mix with the dry ingredients above to form a batter. Scoop by 1/4 cup measurments into muffin cups. This makes 12.
- 1/2 apple ( I use Gala)
- 1 tbsp vanilla
- 3 tbsp coconut oil
- 2 eggs
- 1 tbsp water
THE ICING:
Place ingredients in vitamix and process till smooth and creamy as icing.
***The icing is optional because these Undergrounds are above board even un-iced. Consider this option if you like less sweet things.
- 2 cups cashews (if you are not using a high powered blender, you will need to soak the cashews for a few hours in water to get them softer)
- juice from 1/2 squeezed lemon
- 8 mejool (pitted) dates (or 16 smaller neglet dates)
- 4 tbsp water (tIf you want to glaze muffins instead of ice them, scoop out half of the icing and add an additional 4 tbsp water. Use the other half of the icing to make a pudding – see below )
THE LEFTOVER ICING. Make Cashew Creme Frozen Pudding
If you have left over icing you can make a creamy pudding: Using the left over, place it back in the vitamix and add 1 frozen bananas and whirl into a frozen pudding! Top with raw cacao nibs.
