These are yummy, easy Pineapple Coconut Protein Muffins. They are great in a pinch when you need to grab and go.
(Okay. Oops. So I couldn’t resist. I was compelled to taste one before the photo was taken. Yummy.)
WET: Put all ingredients into vitamix (or blender) and whirl until smooth liquid.
- 1 tbsp coconut oil melted
- 2 tbsp almond milk
- 3 tbsp NUTRABIO protein powder (get it here)
- 2 tbsp lemon juice
- 1 tbsp vanilla
- 1 bananas
- 1 cup frozen pineapple chunks
DRY: Mix in bowl
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1 tbsp flax
- 1/2 cup coconut flour
- 1/2 c almond flour
- 1/4 cup coconut flakes
Add wet to dry and mix by hand.
Drop by 1/4 cup into tins. Sprinkle with pecans. Bake at 350 for 25 minutes or until center in done.
After much research, I’ve found this to be one of the purest versions of whey protein.
