Chocolate Almond Stuffed Cookies with Pumpkin Hot Chocolate

Flour-less , sugar-less and totally delicious! These Chocolate Almond Stuffed Cookies (with a side of Pumpkin Hot Chocolate) are made with chick peas (replacing flour) and dates (replacing the sweetener). The chocolate is a raw unsweetened cacao superfood providing tons of anti oxidants and nutritional benefits.

Honest to Goddess Goodness, YOU deserve to serve yourSelf.

Before you can say “but I like my pumpkin stuffed Oreo’s and flip off this recipe, keep an open mind that a cookie doesn’t have to be the thing that disrupts your healthy eating or add inches to your waist. Have you any idea of the ingredients that go into store bought cookies? YUCK! Isn’t it time to stop stuffing anything in your mouth and take some care about what you put into the gorgeously divine body of yours?

You deserve to sit down, sip, savor and satisfy all your senses. You can create and increase the pleasure you have with your food if you allow yourself to be there in the moment giving total attention to it. That would mean NO magazine reading while eating, no talking on phone while sipping, no texting while chewing, no standing while swallowing. You get the point. That would mean SITTING DOWN, SLOWING DOWN, FOCUSING ON WHAT IS RIGHT IN FRONT OF YOU.

Leonardo (I adore him) was a tad pissed and often spoke of how people listened without really hearing, touched without really feeling, moved without awareness, looked without seeing and ATE WITHOUT TASTING. Imagine that they didn’t even have cell phones or television back.

This recipe is an invitation to feel your way through the preparation. Feel while you prepare it. Really look at it and be present to the preparation and the mixing of the naked ingredients.

All the ingredients for these stuffed cookies are NAKED, meaning food in its most natural form. You could argue about the powder being somewhat processed so you can feel free to leave it out if you want to really strip down bare and replace it with 2 tbsp almond four.

I love this purple mixing bowl. This recipe makes up into a nice cookie dough consistency. Here I mixed the wet into the cacao nibs and almonds slivers.

I used a cookie scooper to get them all the same size. I used the bottom of a glass to flatten them before baking.

You can absolutely serve them like this just plain simple single chocolate almond cookies.

Or you can stuff them like sandwich cookies which is a lot of fun. Simply mix up 2 tbsp coconut butter, 2 tbsp tablespoon almond butter, and cinnamon and spread in between two cookies like a sandwich.

They come out looking like drippy deliciously creamy sandwich cookies with a loud invitation to EAT ME.

So go ahead and eat them. YOU deserve to treat yourself well and that starts with the food you take into your divinely precious body.

COOKIE ALMOND COOKIE RECIPE:

Mix all ingredients into vitamix (leaving out the last 2 – cacao nibs and almond slivers as you’ll mix them in last). It will form a nice cookie dough consistency.

Ingredients:

1 can chick peas (rinsed and drained)
1 whole egg
10 pitted chopped dates
1/2 tsp baking powder
2 tbsp raw cacao powder
1 tbsp chia seed
2 tbsp vega chocolate protein powder
1 tbsp vanilla
3 tbsp almond butter
1 tbsp coconut oil

Directions:

In a mixing bowl, combine 2 tbsp cacoa nibs and 2 tbsp almond slivers and add the mixed dough from the vitamix. Now you are ready to scoop. Scoop cookies onto parchment paper lined cookie sheet. Bake at 350 for 12 minutes. When cooled, spread filling on one cookie and top with another cookie to make your stuffed cookie.

COCONUT ALMOND CREAM STUFFING:

Ingredients:

2 tbsp coconut cream
2 tbsp almond butter
cinnamon to taste

Directions:

Mix together in a bowl. (You may have to warm up the coconut cream until it is liquid and stirable)

And don’t forget your pumpkin hot chocolate.

PUMPKIN HOT CHOCOLATE RECIPE :

Ingredients:

1/2 cup pure pumpkin puree
1 cup almond milk (plain or chocolate)
1 tbsp raw cacao
stevia to taste (or 1 tsp honey or maple syrup if you prefer)

Directions:

Mix all together in a pot, stirring till warm and creamy. YUM. Sip and savor slowly.

What if you could feel great naked?

It is possible. Really, it is. No matter where you stand right now.

Why is it important to feel good naked? Far too many women have shared with me how they don’t like themselves naked. And it stops them.

IT STOPS THEM.

Stops them from truly enjoying all areas of life. Sex is a big “no-no” when you don’t feel good naked. If you find yourself resisting and avoiding sex because you don’t like your body, you are missing out on a big part of your health.

When you eat better, you will LOOK BETTER NAKED. That’s a fact.

More importantly, when you eat better, you will FEEL BETTER NAKED. And how you feel is most important of all.

“Eating better means …:”eating sexy, naked food.” Or “eating sexy food while you are naked”. Or “eating naked food before having sex.”

Pick one. They all point to the same thing. It’s all about feeling good in your body and about your body by taking “action” to get you what you want. By action, I mean clean up your plate. Really ? Seriously? If you are actually thinking that you could eat a few slices of pizza topped off with a mound of ice cream for dessert and feel happy to be ripping off your clothes, I seriously doubt it. Sorry. More likely you’ll be ripping them off because they feel tight, you feel bloated and gross and because that is the direct result of eating like crap. It doesn’t feel very sexy.

Let’s be real here. You are indeed living in your body. Whether you call it your temple or your vehicle, it is your mode of transportation in this life. The better you feel in “it” and about “it”, the more confidence you will have. The more confidence you have will allow you to put your best self out there in whatever it is you are up to in this world. When you feel rockin’ hot, sexy and gorgeous, everyone believes you. Even you believe you.

ASPARAGUS

It’s been said that asparagus stirs up lust in men and women.
This vegetable is a great source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin and folic acid. The latter is said to boost histamine production necessary for the ability to reach orgasm in both sexes. And the shape of the asparagus spear is nature’s little tease.

ALMONDS

Long ago, the almond was regarded as fertility symbol.
It was even said that Samson wooed Delilah with these nuts.
Almonds provide vitamin E, magnesium and fiber and improve your general well being. The better you feel in your body, the better you perform in every area of your life. Yup. Sex is an area of your life.

AVOCADO

Avocados are voluptuous and feminine in shape and size. Back in the day, the Aztec’s thought that the fruit resembled the male testicles as it hung on trees in pairs. The avocado is a really healthy fruit filled with necessary good fat and quite helpful for enhancing hormones.

Here’s a SEXY SALAD that is yummy delish, satisfying, body enhancing, weight loss promoting, and energy boosting.

NAKED DRESSING:

2 figs
1 banana
2 tbsp balsamic vinegar
2 tbsp almond or 1 tbsp almond butter (use almond butter if your blender is not that powerful as in Vitamix)

Mix all ingredients until creamy in your Vitamix. YUM.

NAKED SALAD:

For the base of your salad, combine a some a combo of chopped romaine, spinach and arugula leaves in a bowl. Add sliced asparagus spears and avocado on top. Pour Naked Dressing over greens and toss. Serve your Sexy Salad on a gorgeous plate.

Ingredients:

combo of romaine, spinach, arugula
asparagus
avocado

SEXY SHAKE:

This shake combines sexy naked food for a really simple easy treat. (Using frozen banana creates a cold and creamy treat) Remember to serve it in a your very special glass.

2 fresh figs
1 tbsp almonds
3/4 c almond milk
1 tsp maca powder
1 tbsp raw cacao
1/2 frozen banana
1/3 avocado

Olive Oil is Not What You Think

You’re being fed big fat lies everyday that are peering at you from the supermarket shelves. Here’s just one more to add to the list.

OlivExtra? Light “tasting” olive oil? W H A T ?

Olive oil may not actually be the olive oil you would expect when a bottle is marked olive oil. Sometimes it’s not even as clearly indicated as these two are. If you happen to be over 40 like me, you’ve got to be armed with the magnifiers and reading glasses at all times to protect your health when grocery shopping. The “OLD” idea that OLIVE OIL is the healthy oil is “OLD” and “OVER”.

As you can see, these two bottles are blends. Think about this. If you ask for olive oil in a restaurant, they would present it in a pretty bottle and technically they could say “here you are” and you’d have no idea you were getting low quality, unhealthy vegetable oil or canola mixed in with low quality olive oil.

The point is that we’re at the point that olive oil is not “olive” oil.

I’ve been privy to this secret for a while because Grandma told me so, and I was not about to argue with her!

My 86 year old Italian Cooking Goddess Grandmother Maria, told me, “The olive oil is not-ta good here, they keep-a it over there! “ (with the accent on NOT and KEEP and her hands flailing to solidify her point, of course I had to agree). The translation of her Italian dialect is that they keep the good stuff in Italy and ship the inferior goods to us.

While that’s not entirely true, (you could go to a gourmet store to shop for imports) there are major problems cooking up on the supermarket shelf. Lies ? Maybe. Confusion. For sure.

Check out this label which indicates “refined olive oil and virgin olive oil” and it could be from any one of the countries indicated: Italy, Greece, Spain, Tunsia, Turkey, Morocco. Not that there’s anything wrong with any of these countries, but I’d like to know what I am getting and where it’s coming from. Is this refined mixture really healthier than “butter, canola, vegetables and other cooking oils” as the label also indicates? (Do they mean it’s healthier than grass fed organic butter? Hmmmm.)

I share with you my findings and beliefs with an invitation for you to investigate on your own behalf. WAKE UP! Become the protector of your body. Know where your food is coming from and what you are eating.

In Sleeping Naked After 40, olive oil is one of the foods I discourage. Clients always proceed with “what’s wrong with a little olive oil?” As a matter of fact I prefer to help you see how you can get your fat from the WHOLE food. Working, studying and certifying with Dr. Joel Fuhrman, gave me further evidence.

Dr. Fuhrman’s research suggests that “Olive oil is deficient in nutrients – the vitamin and mineral content of olive oil is very small due to the discarding of the protein during extraction, which contain a significant portion of the sterols anit-oxidants and protein-bound fibers. The beneficial micronutrients that do remain in the olive oil, like some plant sterols, are plentiful in other foods that are less calorically dense” (keep reading).

In other words, most olive oils available to us are highly processed, and even more importantly not the real deal anymore.

EWWW!

Think of it this way. Would you let the gas attendant put inferior oil into the car you love and rely on to get you where you need to go? I doubt it.

So where do you get your healthy fats?
FROM unprocessed, untouched, NAKED (whole) FOOD, of course:

nuts,
seeds,
coconut,
avocado,
wild salmon

THE WHOLE FOOD!

So now what? What the heck can you put on your salad and veggies if you can’t douse it in olive oil?

Raw veggies, water steaming, sautéing, roasting, baking… are all ways to eat your veggies without oil. I also use the best quality coconut oil that works for everything. And it’s yummy. I am aware how this product is manufactured and where it is sourced.

As for dressings! You can make the most creamy delish dressings using no oil at all. Come on over to my kitchen and check it out and try this one for simple sweet creamy dressing.

Mix in high vitamix blender:

1/4 c raw cashews
1/3 almond milk
1/2 apple
1 mejool dates
